SINGAPORE, 30 April 2010 – As the Singapore Youth Olympic Games Organising Committee (SYOGOC) gears up for its 99-day Countdown Celebrations at the new *SCAPE Youth Park on 7 May, Fairmont Singapore will be throwing a “surprise” party of a different kind. Every day, for 99 days until the opening of the inaugural Youth Olympic Games
(YOG) on 14 August, the Official Hotel Partner of the YOG will be surprising one lucky in- house guest with a special celebratory treat – be it a complimentary luxury stay, a heavenly spa or dining experience, or a pair of coveted tickets to the YOG Opening Ceremony!

Mr Ian Wilson, General Manager of the Fairmont Singapore commented, “This is such a fun way of fulfilling our mission to turn moments into memories for our guests and keep the momentum strong, as we draw closer to the inaugural Youth Olympic Games”. Guests, who dine, stay or enjoy a spa treatment at the Fairmont Singapore during the 99-day
countdown to the YOG (7 May to 14 August), stand a chance to have their entire bill waived. The “Schedule of Surprises” will be rotated throughout the hotel, from accommodation to Willow Stream Spa, the dining outlets and bar which include Prego, Plaza Market Café, Szechuan Court, Inagiku, Alligator Pear and INK Club Bar.

Fairmont Singapore is also sending a contingent of 99 colleagues to attend the 99-day Countdown Event on 7 May at *SCAPE Youth Park, where it has adopted the YOG sport of “Rowing” in a booth at the Sports Carnival on-site. Two participants can compete alongside each other in 5-min Energy Record Challenges, to see who can burn more energy
on the rowing machines.

Says Trevor Studd, Director of Spa & Leisure, Fairmont Singapore, “This is a great preview to the very first 24-hour Fairmont Energy Challenge Cup that we will be organising in July, where we will set the record for the most amount of energy expended in 24 hours, using a series of treadmills, cross-trainers and stationery bikes. Our partnership with the YOG is very much aligned with our commitment to promote sports and wellness to our community, as well as to our guests and colleagues, to encourage them to make fitness an integral part of their lifestyle.”

Fairmont Singapore has a variety of fitness programmes offered to its guests, including the “Energy Boot Camp” – a month-long practice comprising 12 fitness-building sessions in a fun and social context, and the “Fairmont Fit” privilege offered to guests who are members of its loyalty program. The hotel provides these guests with Adidas workout apparel and shoes, a pre-loaded MP3 music player and a yoga mat, to enable guests to stay fit on their travels, while keeping their luggage lean and minimizing any inconvenience in the event that they have not packed their fitness gear. Come 1 May, it will join other Fairmont properties around the world by offering the R U Ready? fitness programme for guests aged 12 to 17 years, a fun and interactive fitness challenge to improve youth’s athletic skills across various sports.

The Fairmont Singapore encourages an active sports culture amongst its employees, as it recognizes that sports are a great way to strengthen relationships among colleagues; promote health and fitness and develop leadership skills. The hotel has been participating in the annual Singapore Hotel Association Inter-Hotel Athletic Meet for over 15 years and has consistently emerged in the top 3 positions in the overall championship ranks. For the 2010 Meet in August, Fairmont Singapore is fielding a 45-member strong Track and Field team, to participate in a variety of events such as 100m, 200m, 400m and 800m runs, 4 x 100m, High Jump, Long Jump, Shot Put, Discus and Javelin etc.

Szechuan Court's Sticky Troika of "Bak Chang"

04/08/2010

Picture

SINGAPORE, April 2010 - Bak Chang or (zongzi) refers to meat (and other goodies) enclosed in glutinous rice filling. It is defined by its savoury appeal which brings back memories of grandma’s homemade cooking and the dying culture of the olden days. A cluster of ambrosial, lip-smacking, bamboo-leaf wrapped morsels filled with delectable surprises makes their much-anticipated return at Szechuan Court, Fairmont Singapore. From 25 May to 16 June 2010, Master Chef Sebastian Goh and Dim Sum Diva Mandy Yeo offer three (3) sinfully decadent glutinous rice dumpling choices that are exquisite, rejuvenating and desirably ‘wrap-turous’.

Diners at Szechuan Court will have their palates rewarded with a mélange of delectable dumpling creations using high-quality grains including the organic red brown rice which are grown in limited quantities in various places around the world. Red brown rice is renowned for its exceptional cooking quality, taste, texture, colour and nutritional value. It is a vital source of anthocyanins (antioxidants), which are disease preventive compounds that help protect the body from serious ailments.

This season, Gong Bao Chicken Dumpling with Peanuts & Szechuan Spicy Peppercorns ($48) makes a comeback to satisfy loyal customers’ clamour for thishefty dumpling, which weighs approximately 1kg. This perennial favourite may easily satiate the hunger pangs of up to five dumpling bon vivants. It comprises a chockfull of mouthwatering ingredients including the melt-in-the-mouth goodness of stir-fried chicken intertwined with the crunchy allure of roasted peanuts punctuated with sizzling Szechuan peppercorn and bathed in a homemade chilli sauce (for that extra kick!). Wrapped in a generous mound of savoury glutinous rice, this flavoursome dumpling packs a mean punch and promises to delightfully singe its way through your taste buds all the way to your tummy.

For the health-conscious, a must-try is the Organic Red Brown Rice Vegetarian Dumpling ($42),a luscious, meat-less and healthy new creation weighing 1kg. Its ingredients include organic red brown rice, savoury chestnuts and mung beans. This scrumptious and carbo-loaded morsel teems with complex carbohydrates that provide 15 essential nutrients, including B-vitamins, niacin and potassium.

This year’s pickings also feature the new and irresistibly aromatic Black Garlic with Smoked Bacon Rice Dumpling ($58). This generous slab of heavenly ‘East meets West’ dumpling weighs approximately 1kg, and oozes with the finger-licking delight of perfectly steamed glutinous rice, tender pieces of premium smoked bacon and the sapid aroma infused by generous slices of fermented black garlic. Black garlic is predominant in high-end cuisine which enhances the flavour of a dish, providing it with subtle hints of sweet and sour balsamic taste.

THE LEGEND LIVES ON…

Duan Wu Jie is a widely celebrated festival amongst the Chinese, celebrated to pay homage to the legend of patriotic poet Qu Yuan. His story involves a long and complicated throne-fighting war and political history. Qu Yuan was an important minister back in the Chu Kingdom in ancient China and was known for his loyalty to the emperor and to his country.

It was believed that tragedy struck when the emperor did not heed Qu Yuan's advice, eventually leading to his own death in the hands of foreign enemies. Out of despair and anger at the resulting corrupt and dying Kingdom, Qu Yuan tied himself to a big rock and threw himself into the River of Puo Luo. It was then the tradition of making rice dumplings wrapped in bamboo leaves started with people throwing them into the river with the belief that this would stop the fish from eating their beloved Qu Yuan's body. Some would even row down stream in a boat, beating drums and shouting out loud in the hope of frightening the fish away. It was believed that this gave birth to Dragon Boat festival as well.

Kopi Tiam’s Sous Chef Ng Kwong Hee uses market-fresh Song and John Snapper Fish Heads, which are favoured for their abundant, firm and succulent flesh, to whip up this mouth-watering quartet of new Fish Head creations:

Steamed Fish Head with Cheng-Ji (Garlic and Bean Paste) Sauce

Putting a Cantonese spin on this hawker classic, a tasty combination of tau cheo (brown bean), chilli, garlic, shallots and sour plum, makes this dish a true winner with its distinctive sweet and sour flavour, punctuated with a delightful touch of spice.

Steamed Fish Head with Reduction of Supreme Soy Sauce Old-fashioned comfort food, simply doused in soy sauce to enhance the sweetness of the fresh fish.

Braised Fish Head in Light Soy and Oyster Sauce with Cabbage, Roasted Pork Belly and Deep-fried Beancurd

Steeped in Chinese rice wine, light soy and oyster sauce, the fish head is first deep-fried, then simmered slowly in a flavourful broth, for a wonderfully aromatic finish.

Claypot Fish Head in Chef’s Secret Stock with Deep-fried Yam, Roasted Pork Belly, Beancurd and Cabbage

Wholesome goodness in a piping pot of freshly stewed Fish Head, Chef Ng’s signature creation packs a punch with generous servings of yam, pork belly and beancurd, plus hot bean paste adding a piquant dash to his potent brew.

Traditionalists and die-hard foodies craving for the original Fish Head Curry can also satiate their appetites with this Kopi Tiam bestseller – meaty John Snapper fish head infused in a heady bouquet of spices and curry powder, simmered in a rich broth of Assam (tamarind) and coconut milk, together with tomatoes, okra and eggplant. This fiery treat is best served with fluffy white rice or bread rolls to mop up every bit of tongue-tingling sauce.

A uniquely Singapore dish, legend has it that an Indian chef named Mr Gomez decided to cook up fish heads, which were usually discarded, using a traditional South Indian curry recipe. Since his creation almost half a century ago, Fish Head Curry grew increasingly popular amongst both Chinese and Indian diners, eventually becoming one of Singapore’s most well-loved delicacies today.

Fish Head Promotion (21 Aug to 30 Sep 09) All Fish Head dishes are priced at $49.50++ each.

A special Fish Head Set, priced at $65++, is also available:

  • Choice of Fish Head (served with rice or bread roll)
  • Tauhu Telur and French Beans with Dried Prawns
  • 2 Beverages (Soft Drink / Barley / Homemade Ginseng Chrysanthemum Tea)
Top up $18++ to replace beverages with 2 glasses of Tiger Beer
